Healthy Weeknight Meal Plan: Week 3

Welcome to Week 3 of our healthy meal planning series! We hope these recipes are making dinners at home a little easier. We would love to hear which recipes have been your favorite so far! 


Monday: We’re starting the week off with a slow cooker chicken cacciatore recipe by The Blonde Pantryfeatured recently on HoH (shown above). This recipe is gluten-free and Whole30 compliant, but you can pair it with pasta or rice for an even heartier meal.


Tuesday: Taco Tuesday! We’re making our favorite easy taco recipe — also by our friend The Blonde Pantry. These can be made in a crock-pot or baked in the oven which takes 30 minutes max. 


Wednesday: Excited to try these egg roll bowls by our friend Smart in the Kitchen. They can be made vegetarian or with pork or chicken. Yum!


Thursday: The temps are under 90, so if it’s not raining, we’re getting out the grill! We’ll throw on chicken, steak, or fish with in-season veggies like Brussels sprouts and sweet potatoes (and we’ll throw in the left over veggies in tomorrow’s recipe!).


Friday: We love recipes that make use of whatever is left in the fridge like this easy frittata recipe from bon appetit that’s basically just eggs and left over veggies and herbs from the week. Left overs will be perfect for Saturday morning!
